A simple green salad is one of these pages on which I can constantly rely on it with baked chicken, a cozy bowl of soup or pasta night. The fresh salad green, crispy toppings and homemade salad dressing come together in just a few minutes, and it is always a hit. This salad has been repeated in my kitchen lately and I have the feeling that it will also be her favorite insert salad!

- Leaf green – I usually use a spring mixing salad, but you can exchange all fresh leafy vegetables that you like for this simple green salad. You can replace arugula, baby spinach, red romaine or butter salad.
- Cucumber – Thin cut cucumber gives each bite a fresh, crispy crunch.
- Red onion – Only a few red onions give this salad a nice sharp bite without overwhelming the other ingredients.
- Almond & pumpkin seeds – I love to throw in cut almonds and pepitas for a little texture and hooker. Roast them for additional taste.
- Honey Dijon Vinaigrette – You will whisk honey, dijon -mustard, olive oil and apple cider vinegar. It’s simple, lively and perfectly balanced.
- Salt & pepper – A short lye in the end produces all fresh flavors in your salad.
Optional side salad add-ins
I usually hold this simple green salad as it is – mixed greens that are thrown with a slight dressing. But if you want to switch things up, you are welcome to experiment. Here are a few simple add-ins, which I sometimes want to add to my thrown green salad:
- Fresh products Like cherry tomatoes, avocado, grated carrot, grated purple kohl, paprika, cooked beets, local broccoli sprouts, fresh parsley or blueberries.
- Nuts or seeds Like pine nuts, sunflower seeds or pistachios.
- Sometimes I like Sprinkle Like crumpled feta, goat cheese or finely grated Parmesan.

Make the vinaigrette: Combine all vinaigrette ingredients in a small bowl or glass. Add 1 teaspoon of kosher salt and ground black pepper to the taste. Whisk well or shake well until they are completely combined. Try and adjust the spices if necessary.
