These are the ingredients and substitutions for our homemade chicken -Cacciatore. For the entire recipe, scroll down to the recipe card.

At first we recommend using skinless chicken legs without bones without bones. They remain tender and moist better than chicken breast. If you only have chicken breast, they work.

Cook the chicken in olive oil or avocado oil.

Use diced onion, cut peppers, cut zucchini and cut mushrooms for the vegetables. We recommend using fresh vegetables if possible.

How to do

Step 1

Fry the vegetables: Add the onion and the garlic in the same pan. Fry for about 2-3 minutes until the onion is translucent. Add peppers, zucchini and mushrooms. Cook for another 5 minutes until the vegetables are tender.

Add the sauce ingredients: Stir the shredded tomatoes, chicken broth, oregano and basil. Bring the mixture to cook.

Step 4

Combine chicken and sauce: Put the chicken back into the pan and make sure it has dipped into the sauce. Reduce the heat to low, cover and let it simmer for about 25 to 30 minutes or until the chicken is cooked and tender.

Step 5

Serve and garnish: Try and adjust the spices after completion and as required. Serve the chicken cover via whole grain pasta, quinoa or next to a fresh salad. Garnish with chopped fresh parsley before serving.
